Dairy fly larvae are used in Sardinia in the production process of Casu marzu pecorino cheese.

Biological cycle

During its reproductive life (4 to 10 days) the female lays about 250 eggs on the substrate suitable for the development of the larvae (cheeses, seasoned meats, smoked fish). The larvae are immediately active already after hatching and quickly nest inside the deposition substrate. The larvae take about two weeks to reach a length of about 10 mm and pupate. The pupae, oval in shape (4-5 mm long by 1-1.7 mm in diameter), brownish in color, are formed directly in the deposition substrate or in its immediate vicinity. The flicker of adults occurs after 7-12 days.
