The operations must be carried out when the soil is temperate to allow the formation of a glomerular structure which guarantees a correct water-air ratio.
For the preparation of the seedbed in spring, plowing must be carried out at a depth of not less than 30 - 40 cm followed by soil refinement operations.

Fertilization, Phytosanitary Defense and Weeding
They must be carried out by applying the provisions of the regulations contained in the regulations issued by the Abruzzo Region regarding Integrated Production.
Geodisinfestation is allowed at the moment of sowing in the open field or located in the furrow.

The sowing must be carried out from mid-March to the end of May in relation to the various types of soil and the climatic trend.
The quantity of seed that is in relation to the size of the seed tuber and the variety must fluctuate from 2,000 / 2,500 Kg./Ha with medium size tubers (40/45 and 35/55 mm) until it drops to 1,400 / 1,600 Kg. / Ha for lower calibres (28/35 mm).
The seed will be planted with a distance between the rows not below 65 cm and up to 90 cm. The distances along the row will vary between 20 and 35 cm.
The practice of pre-sprouting is allowed.

Cultivation techniques: fertilizations, phytosanitary defense and weeding
They must be carried out by applying the provisions of the Standards contained in the specifications issued by the Abruzzo Region regarding integrated or organic production.
Particular attention must be paid to the tamping to give the furrow a convenient shape and in any case such as to avoid the escape of the tubers from the soil and therefore the greening of the same.

The following irrigation techniques are allowed: sprinkler irrigation and drip irrigation, with preference to all those that allow water savings.

Harvesting will begin on July 20 (with early varieties) and will continue until November 15, for medium and late cycle varieties.
The collection will be carried out when the tubers have reached their physiological maturity, that is when the peel does not allow to detach from the pulp so as not to compromise the characteristics of the product referred to in art 2. (by pressing the peel with the thumb).
The practice of chemical drying of vegetation is allowed.
In particularly dry and / or cloaked soils, a little watering must be carried out before digging to avoid causing mechanical damage to the tubers.

After the harvest and a first sorting in the field, the potatoes must be transported to the conditioning centers, to be stored in suitable environments both in terms of temperature and humidity, in order to maintain the quality characteristics referred to in Article 2.
The storage of the potatoes must take place in containers (bins), at a temperature of 4 - 10
° C and relative humidity between 88 and 95%.

Conditioning and packaging centers
The potatoes, IGP "Patata del Fucino", can be marketed "as it is" or following conditioning, washed and / or brushed.

Article 6.
Link with the environment
Link between product characteristics and cultivation environment
The soil and climatic conditions of the Fucino located at 700 m a.s.l. influence the qualitative characteristics of the potatoes so much that in sensory evaluations performed with the flavor profile method on steamed tubers or on fried tubers (depending on the culinary destination) in order to obtain an aromatic and gustatory profile, the Fucino potatoes comparison with the same varieties
grown in other areas both Italian and European (Germany, France, Calabria, Emilia Romagna and Lazio), they diversified by the index "typical taste or goodness of flavor".
The Fucino potato, through the panel test performed by trained taster judges and teachers of the AIS (Italian Sommeliers Association), showed a very pronounced "taste goodness" or "Potato flavor" with an almost absence of negative aftertaste, (metal, grass, etc.).
The goodness of the flavor together with the structural characteristics of the pulp such as consistency, humidity and granulation, make the Fucata potato of high quality and easily identifiable by consumers.
Another qualitative aspect of the Fucino potato is that it does not have the defect of blackening after steam cooking (after cooking blackening) due to the reaction between gene chlorine acid and iron with the formation of melanin compounds that are not very appreciated by the consumer. Also in this case, the comparison with potatoes of other origins has highlighted how the Fucino potatoes are the only ones not subject to alteration. (Ref. Potato Project created by ARSSA Abruzzo and the "Mario Neri" Institute 1st year).
The qualitative analyzes also confirm the high quality of the Fucino potatoes which combines the validity of the qualitative parameters with a typical and distinctive goodness of the pedo-climate of production. Potato Project created by ARSSA Abruzzo and the "Mario Neri" Institute, 2nd year 2007).
Since 2002, many associated Fucino producers have been producing potatoes according to the "integrated production" certification scheme, adopting a specification regarding the product explicitly referred to as "Fucino potato" as evidence of the use of the name in the production-commercial language.
There are several articles published in sector magazines such as "The agricultural informant" where the name "Potato del Fucino, the Fucino as an area highly suited to the production of potatoes and the Fucino as a location for the variety experimentation of the potato are mentioned:
"The potato varieties grown in Italy and their intended use" (pg. 61, number 2/2002);
"This is why seed potatoes are not produced in Italy" (pages 34-36, number 46/2008);
"Seed potato production: contribution for the enhancement of mountain agriculture" (pages 27-29, number 18/97);
"Varietal experimentation 1998 on common potatoes in the center and in the north" (pages 39-46, number 48/98).
Over the years, many activities have been carried out by local operators in the promotion and enhancement of the "Potato del Fucino", the following are mentioned:
since 1971 the "Potato Festival" which has been organized in Fucino and precisely in the municipality of Avezzano;
in 2008, the international year of the potato promoted by FAO, the potato growers of Fucino as part of the "Albania Project" cooperation project, provided technical support and agricultural tools to the Albanian Zadrima;
in 2001 an episode of the television program "Il Gusto" dedicated to the Potato of Fucino aired on the channel 5 network;
in 1993, in an episode of Green Line broadcast by RAI, the reputation of the Potato del Fucino was disclosed nationally ".

Link between the production chain and the environment
The wide representativeness of the operators in the pieces of the production chain, the availability of high quantities of product, the specialization of the workers in the cultivation, the notoriety of the goodness of the Fucino potatoes, the wide range of processed product (pre-fried and frozen potato sticks , frozen cubes, pre-fried potato wedges and round, potato dumplings, potato pie, etc,), the recent productions of fresh peeled and cut fresh product ready for cooking, are all evidence of the strong link between the territory and the "pommel" of land ”and represent the interest of operators to remain among the leaders in this sector.
